What is brisket?
Brisket comes from the chest of the animal and is one of the tougher cuts of meat because it is made of two muscles that overlap. These are the muscles that the cow uses to walk, run, push itself off the ground, and more. In our 100% grassfed beef, our cattle use this muscle even more than conventionally raised beef cattle. The regular use of this muscle makes it a very tough cut of meat laced with tight connective tissue. This is why brisket does not make good steaks, but it is also why brisket is perfect for “the low and slow love and dedication of a good smoke.” The slow and steady climb in temperature as well as the smoke tenderizes the muscle and breaks down the connective tissue, while also sealing in the rich, beef flavor.
“The thickest part of the brisket is called the “point” and the thinner, more uniform part of the brisket is called the “flat”. The point is often more heavily marbled with fat and is often called “fatty brisket” in BBQ joints. The flat is less fatty and called “lean” in restaurants” (heygrillhey).

Nutrients in Brisket
Brisket is a nutrient-dense cut of meat that is very beneficial for your family. Brisket is packed with protein and oleic acid which helps manage cholesterol. Additionally, the connective tissue found in brisket means it contains a lot of collagen, which is necessary for joint health and firm skin. A 4 oz serving of brisket is going to serve up approximately 30 grams of protein and 20 grams of fat. It also includes vitamin B12, vitamin B6, riboflavin, niacin, and more, as well as minerals like zinc and iron.
Preparing a brisket
Preparing a brisket can be a labor of love. The work involved can often discourage potential brisket-eaters from investing the time. With any brisket, but especially grassfed briskets, the longer the cook time, the better! This simple oven brisket recipe cooks for 6 hours, which is about average for oven-cooked brisket. One cook’s recommended cooking time for brisket on the grill is 12-18 hours. Other recipes I found recommend between 9-12 hours. Each brisket has its own “personality,” meaning that no brisket cooks up the same way. This means that monitoring the internal temperature is important. This intentional process highlights the beauty of barbecue: “When it’s done, it’s done.”
